Upon drying, leather and parchment will shrink if not restrained.  Water can cause metal fasteners to corrode,  weakening paper and resulting in physical damage. (iron/copper)

Moisture can cause image media to become soluble and transfer or bleed to adjacent sheets, move horizontally or vertically within the sheet, or completely obliterate information.
